Kabul is the capital city of Afghanistan, its food reflects the continental cuisine of Afghanistan.  The city’s main food comes from major crops like bajra, wheat, rice, etc. They also use a variety of spices and milk. Kabulis mostly eat the staple diet of chicken and rice. Let’s go through some of the mouthwatering dishes of Kabul.

1. KABULI PULAV

Kabuli pulao is mainly made by using Lamb meat. It is colloquially also called quabili pulaw. Steamed rice is cooked up for this process, with a mixture of spices and dry fruits. Chicken and mutton are also used up in cooking.

This dish is basically a dumpling that is eaten as a snack or at breakfast. This dish is not cooked with the fillings of meat and cheese but filled with steamed vegetables. Those veggies are then mixed with sauce and mayo and then steamed or shallow-fried.

Bolani is the traditional dish of Kabul. It is prepared by using stuffed meat, vegetables and different types of seafood. It mostly accompanies the main course meal which is fulfilling.

This is a dish that we all are familiar with. But in Kabul this is made with lots of milk mixed with wheat flour and lots of dry fruits and kesar, to give it a nice colour and rich taste. The main ingredient of sheer khurma is vermicelli.

This is a kabuli styled fruit salad. This dish gains a lot of importance during Nawroz. This contains dried fruits with syrup on top of them.

6. BORANI BANJAN

This is nothing but a vegetarian dish consisting of eggplant, which is topped with yogurt or cream and mint chutney.  This dish is baked but before actually baking it, it is fried to give it an extra coating. The spicy level can be adjusted according to a person’s taste as this dish is heavily sauced.

This is mainly served using a whole of lamb marinated with rock salt. Sometimes instead of lamb chicken is also used and roasted with mayo with it. Green papaya paste is also used while marinating to add to the taste.

8. LAVASH

This dish is akin to Indian chapati or Roti. But lavash is generally made in a pot placed upon burning charcoal to maintain its taste. It is typically eaten with cheese and chicken and is a traditional dish at weddings.

9. KORME KOFTA

The English version for this is lamb meatballs. This dish is mostly born out of leftover rice and vegetables. Then the minced lamb and various kabuli spices are added to it and then deep-fried.

10. CHALOW

CHALOW

Chalow is a dish consisting of rice and meatballs curry. The meatballs here are of chicken or lamb which are deep-fried and then sauteed with tomato curry. It is mostly eaten as dinner.

11. AFGHAN LAMB KEBAB

As the name suggests, it is made of lamb, barbequed in the open hot sun with lots of sauces and then skewered in oil. It tastes good when it is hot.

12. GREEN SAUCE

It is a must in every person’s house. This is a condiment that is made out of mint, coconut and lots of chillies. It is mostly eaten with a roasted papad.

This is very common street food.  It is mainly made from minced ground meat. The cooking of this dish is very easy as it is always steamed.

14. AFGHAN JALEBI

This is a famous sweet dish with an entire song written with this title. It is made with flour and sugar syrup and shaped like flowers.

This is a very thick noodle recipe. The two main ingredients are noodles and mint garlic. It is served with a variety of spices and hot soups. The kids love it.
